The one and only thing I liked about my interview at the University of Tulsa was the Vietnamese restaurant we went to the first night I was there. I had this amazing Garlic Ginger Chicken, wonderful spring rolls with a dipping sauce that I still crave, and ca phe sua de - vietnamese iced coffee. It was delicious and I HAD to have it again.
After a quick, but not exhaustive, search I couldn’t find a similar restaurant near me. (I’m sure there is one, I just haven’t found it yet)So I went online and started researching how it was made, the type and grind of coffee, where to get it, etc… I’ve never really had any luck duplicating something I’ve had in a restaurant before, but it seemed relatively simple and it was so good I at least had to try.
I ended up getting a single serve filter and a couple pounds of coffee from someone on eBay. After much waiting, anticipation, and package tracking it arrived yesterday. The first thing I did once I got home was to start a pot of water boiling and measure out the coffee. Then I put the sweetened condensed milk in the bottom of the coffee cup, the filter on top the coffee cup, added the boiling water, and had a glass of wine while I waited (it takes about ten minutes.) I didn’t make the iced version, but it was still just as good as I remember it being. In fact it was so good I had to get on eBay and bid on two more filters, because how can I make it for friends if I can only brew one cup at a time? Now if I can only figure out that damn dipping sauce…
